BUILDING YOUR PALATE
If you’re just getting into this knowledge because you’re finally of legal drinking age and want an informed introduction to the wonderful world of spirits, you are wise beyond your years… Sadly, most Americans (us TCC counselors included) consume a good amount of alcohol before they ever properly taste it, let alone produce it or make a decent cocktail with it! So, no more ‘shots in the dark’, let’s learn how to ‘taste the rainbow’...
You only need a small amount (think two thimbles, not two fingers) to taste. Pour a touch of your spirit into a small glass and give it a little swirl so the aroma can circulate.
Give it a sniff! Remember that a large part of our palate relies on the olfactory system for proper introduction.
Let a few drops trickle from the tip of your tongue on down, off the sides, and towards the back of your throat. Take a ‘reverse yoga breath’: in through the mouth, then keeping your mouth agape, exhale through your nose. This process is merely cleansing our palate!
Now, with your palate cleansed and ready, Repeat Step 3. Close your eyes if it helps you concentrate on the flavors and textures, keeping in mind the five fundamental flavors:
Sweet
Salty
Sour
Bitter
Umami
It is also important to note textures (how it makes your mouth feel).
Use some of these descriptive words to connect. Remember, tasting is always better with company! Every palette is different and our experiences inform our interpretations.
